soup...the perfect fall dinner

Last week I had a sudden craving for a good, creamy corn soup. Now before you get any funny ideas about why I was having a craving, it was merely cold-weather induced. But it was already later in the afternoon, and I couldn't find the recipe for the only corn soup I'd ever made before, and that particular one called for some ingredients I knew I didn't have. I mentioned my lament on Facebook, and one of my friends, Julie was kind enough to quick share her Corn, Ham & Potato soup recipe with me (thank you Julie!), and I whipped it up for dinner that night. It was YUMMY!!! So if you're looking for a good soup recipe for one of these chilly fall days, here ya go.

(It calls for jalapenos, which I didn't have, so I just sprinkled in some cayenne pepper to taste. My family likes a little bit of 'zing' in their food, so this worked perfectly for us, but I'm sure if your tastes are tamer, it would still be delish with the hot stuff just omitted all together.)

I took one of Julie's suggestions and served it with a nice crusty bread and Mmmmm...

Corn, Ham & Potato Soup

1 celery stalk chopped
1/2 onion chopped
2 jalepenos chopped
2 T butter or marg
2 T flour
3 C milk
2 C chopped ham
2 C cooked and cubed potatoes
1.5 c frozen or fresh corn
1 can of creamed corn
melt the butter and add the celery, onion and peppers. Add the flour. Stir until everything is kind of coated. Add the milk. Bring to a boil. Cook and stir for two minutes. Add everything else and heat thoroughly (maybe 10 minutes). Serve with a crusty loaf of bread and a salad and Voila! Dinner!

I made this on that rainy day last week. Perfect fall dinner! But my kids hate it. Weirdos!
