make ahead meals

This week some friends and I are trying something. We are getting together to cook some meals that we can stick in the freezer, and have them on hand for a quick-need-a-meal night. We are trying to combine our strengths and help cover each other's weaknesses. For instance, I am terrible at planning meals and hate grocery shopping, and especially trying to do them in a cost efficient manner. My friend Laura loves, and is good at those things. I have a teeny tiny kitchen, my sister Betsy has a ginormous one, with plenty of room for a few friends to cook together and not be on top of each other. So, Laura did the planning, she and Bets will do the shopping (and Betsy will host) and another friend and I will join the party. And what do I have to bring to the table? Well, not much, I'm afraid, other than a teachable attitude, willingness to accept help, and an offer to babysit while my friends do the work of 'hunting and gathering' (a.k.a. grocery shopping). (And maybe I'll do more/most of the cleanup?)

For our first attempt at make-ahead-meals, we will only be doing 3, and here's what they are:

Shepherd's Pie
Baked Ziti
Chicken Cordon Bleu with Cheesy Potato Casserole

that is an awesome thing to do! Some friends and I have talked for several years about doing this same thing... we've never gotten around to it! I have made meals myself and put them in the freezer! It's so nice to have them!!! Hope you all have fun!
