(By the way, this is totally random, but this post is number 333 for me...just caught my attention when I logged in - 3 3's!)
Anyway, just thought I'd share 2 great chicken recipes that are always a big hit whenever I make them. (The boys might say they don't love them, but they don't complain at all, so for me that's success!!)
Catalina Baked Chicken
(Prep time: 10 min., cook time 1 hr 10 min.)
Ingredients:
3 lb boneless, skinless chicken breasts
1 can (16 oz) whole berry cranberry sauce
1 (8 oz) bottle catalina dressing
1 envelope onion soup mix
Preheat over to 350 degrees. Place chicken in baking dish. Mix cranberry sauce, dressing and soup mix. Pour evenly over chicken. Bake 1 hour or until chicken is done.
(There's always lots of the sauce in the pan, which tastes wonderful over brown rice, which I usually serve with the chicken. It also makes an impressive-looking dish when you actually serve the chicken over top of the rice with the sauce poured over. Mmmm...)
Lemon & Honey Chicken
Ingredients:
1 lemon
1 whole roasting chicken
1/2 c. orange juice
1/2 c. honey
Pierce lemon with fork (or slit with knife). Put inside chicken cavity. Place chicken in slow cooker (crock pot). Combine orange juice & honey; pour over chicken. Cover; cook on low for 8 hours. (Can also be done in a regular oven at 350 degrees for about an hour or so). Remove lemon & squeeze over chicken. Serve w/juices as gravy.
