lemon & honey chicken

Tonight I made the easiest dinner ever, and it was still one of those 'comfort food' meals that the whole family enjoyed (though the boys still say that Grammy's fried chicken is the best ever). My friend Ang made it for us after Luke was born and we loved it so much I asked for the recipe. It was a bonus that it was so SUPER easy!! (Had to give credit where credit was due! Thanks Ang!) So here's the chicken recipe...throw some veggies together and voila!

Lemon & Honey Chicken

Ingredients:
1 lemon
1 whole roasting chicken
1/2 c. orange juice
1/2 c. honey

Pierce lemon with fork (or slit with knife); put inside chicken cavity. Place chicken in slow cooker; combine orange juice and honey - pour over chicken. Cover & cook on low for 8 hours. (I usually just do it in the oven in a roaster pan, following the roasting directions on the chicken. It's usually roasting it at 425 degrees for about an hour to hour-and-a-half). Remove lemon & squeeze over chicken. Serve with juices as gravy.

I really like serving rice with it, as the juice is really tasty over the rice.
